This Diavolo Spaghetti Sauce is a slow-simmered, bold tomato meat sauce layered with warming spices, sweet peppers, and authentic Pepperamster heat. Rich, balanced, and deeply savoury, it delivers a full-bodied past with controlled fire.

Ingredients:

16 Cups crushed tomato
4 small tins tomato paste
2 celery stalks diced
4 white onions diced
4 large sweet peppers diced
3 Tbsp Peppermaster Hurricane sauce of your choice
3 Tbsp Peppermaster Fusion Fire sauce
3 lbs lean ground beef
1 garlic bulb, minced
2 Tbsp turmeric
2 Tbsp crushed red chillies
2 Tbsp cumin
Fresh ground Peppermaster Pepper Pepper and Peppermaster Bahamian Fire Salt to taste

Instructions

1. Brown the Base

In a large heavy-bottomed pot, brown the diced onions, minced garlic, and lean ground beef over medium heat. Break up large clumps and cook until the meat is fully browned and the onions are translucent.

2. Build the Sauce

Stir in crushed tomatoes and tomato paste. Mix thoroughly until well blended.

3. Layer the Heat

Add diced celery, sweet peppers, turmeric, cumin, crushed red chillies, Hurricane Sauce, and Fusion Fire. Stir well to distribute spices evenly.

4. Slow Simmer

Reduce heat and simmer uncovered for 3 hours, stirring occasionally to prevent sticking. The long simmer develops depth and balance.

5. Rest for Maximum Flavour

Remove from heat and refrigerate overnight. This resting period allows the capsaicin, spices, and peppers to fully integrate.

6. Serve

Reheat gently and spoon over freshly cooked spaghetti or the pasta of your choice. Top with grated cheese and fresh herbs if desired.

How spicy is this Diavolo spaghetti sauce?

Heat level depends on your Hurricane Sauce selection and how generously you season. It is bold but balanced. If you choose the Hurricane Nada it will add no heat and no sting. The Tropical Storm, a level 7 will add a nice warm heat, with great flavour. If you want to set fire to your face, choose the Hurricane Cat 6. It’s chock full of superhot chillies, the mildest of which is the ghost pepper!

Can I make it without beef?

Yes. Substitute plant-based, use lentils, or other pulses, or you can omit it and entirely replace with mixed vegetables for a rich vegetarian version.

Why chill overnight?

The capsaicin in the peppers and the spices will integrate more fully after resting, resulting in smoother, more rounded heat and richer flavour when you serve the sauce. But you don’t have to chill it overnight, you can serve it right away! There should be enough for leftovers.
