Dom’s Beef Bourguignon

Got a busy workweek ahead? This is fabulous for Sunday dinner, but if you make a double recipe on a Monday, you can dip into this all week.

Recipe by Dom Wells, Peppermaster’s Production Manager and an excellent chef in his own right. A hearty stew is welcome anytime, and especially while the weather is still cold out.

Pair this with a nice crusty roll, or even with the Peppermaster’s Corn Bread to soak up all the yummy gravy.[wpurp-searchable-recipe]Dom's Irish Stew – – of bacon, boneless beef chuck in cubes, red wine, chicken broth, tomato sauce, soya sauce, flour, garlic (finely chopped), thyme (finely chopped), carrots, medium turnip, mushrooms (chopped in quarters), large onion, celery stalks, baby potatoes, Peppermaster Hurricane Mash, Peppermaster Pepper Pepper, , First, stir a bit of the chicken stock slowly into the flour to create a smooth paste (roux); Set the roux aside; In a large skillet, cook bacon over medium high heat until crisp; Add crisped bacon to the slow cooker. ; Season the beef with salt and pepper and sear each side in skillet. ; Add beef to the slow cooker. ; Pour red wine into the frying pan, scraping down on the brown bits from the sides. Simmer this to reduce, while stirring both to continue to loosen solids and to prevent more from occuring ; Slowly add chicken broth, then soya sauce, then tomato sauce. ; Give this a good stir to incorporate all elements; Slowly whisk in roux and cook while stirring, to thicken sauce. ; Add sauce to the slow cooker. ; Add all vegetables and thyme. ; Give it a big stir and cook on low until meat comes apart with fork (8-10 hours); Add Peppermaster Hurricane Irie Mash to serving, to taste, and fresh cracked Pepper Pepper; ; – <a href="https://peppermaster.com/product/index.php?main_page=advanced_search_result&search_in_description=1&keyword=Hurricane+Irie+Mash" target="_blank" rel="noopener">Peppermaster Hurricane Irie Mash</a>
